Curdling is caused by 2 things 1) heat and 2) acidity. Perhaps control the heat?

Wonder also if different canned longan syrup has different level of acidity. Have you tried using sugar?

My pudding form cuddling – I guess it’s the longan syrup caused the problem. Suggest drop the longan syrup and use sugar instead.
